Make it From Scratch
Whipped up a little meringue pie for dessert after a chili dinner last night. That adorable pie plate was a great find at a thrift shop. I made the crust myself, and the meringue turned out great, but the filling left a bit to be desired. It was a JELLO mix and after the lemon curd I made a couple days ago, I wasn't very pleased with the lack of flavor in this pie. Next time, I will definitely take the time to juice and zest.
I shared this post over at The Enchanting Rose for Tuesday's Roses of Inspiration. If you are ever feeling inspired to bake yourself a lemon meringue pie, take the time to make it from scratch. Frankly, it's just not worth the calories otherwise.
As far as Tuesday's go, I will be glad when this one is over. I have a dentist appointment this morning for a tooth I managed to chip while eating popcorn. So there will be needles and fillings involved. The process makes me so incredibly nervous. I will be so glad when it is over. I hope you all have a happier Tuesday planned.

ReplyDeleteI haven't made a lemon meringue pie in years even though it is a favourite of my husband. Planning now to do it for Easter as a treat. Sorry about the tooth, it must have spoiled your popcorn enjoyment no end.
